I don’t know why you couldn’t but the licensing agency is the one to ask. The flight surgeons and agencies like the FAA are the ones that know the rules so look them up and see if it is a condition that would exclude you.
Cant see why it would make any difference after all your the one that controls your diet
If you find a company that appeals to you, consult them as you’d have to complete their regular medicals anyway so good to be honest.
Also, I would think worst case is your need to have ’special foods’ with you on your travels just to be sure you know what you’re consuming.
